Whole carcass dry-aging is our signature difference maker. Conventional beef production processes the carcass immediately after harvesting.

We believe all products benefit from aging, which is why we do it, however most facilities lack the enormous space required to perform this. Our state of the art refrigeration system keeps airflow maximized for this application.

Seven Hills Craft

Our Natural Virginia Beef line consists of cattle more heavily influenced by grass in their diet, with a bit less grain feed. These products are known for their craft style “brown box” packaging. This items are found at an affordable price point, with the same dry-aged quality.


Seven Hills Ground Beef & Patties

Dry Aged ground beef is not very common. Our process imparts an unique “beefy” flavor profile to our ground beef. We think you’ll appreciate the difference!
